Joshua Thomas returned to his hometown of San Antonio to partner up with Peter Selig and Chris Carlson to open Maverick Texas Brasserie in the winter of 2018. In 2019, Wine Enthusiast named Maverick one of the Top 100 places to drink wine in the United States.
